Did you know that the buffalo mozzarella in addition to being good, also does well? A study conducted by researchers at the University "Federico II" of Naples has highlighted the beneficial properties of buffalo mozzarella. The analysis has shown that during the digestive process, the dairy product favors the development of certain peptides which, by acting on the intestinal cells, have an antioxidant action.

Research conducted at the University "La Sapienza" of Rome and the University of Parma, instead, have shown that the buffalo mozzarella has a limited salt content and is an easily digestible product, due to reduced lactose content; even lower than those found in highly digestible products.
