Mozzarella's etymology

On the origins of the name, now there is no doubt: mozzarella comes from the term "mozza" ("truncated"), in allusion to docking, the process by which divides the dough into individual pieces by the characteristic forms. The term appears for the first time in 1570 by Bartolomeo Scappi: “Capi di latte, butiro fresco, ricotte fiorite, mozzarelle fresche, et neve di latte” ("Pieces of milk, fresh butter, flowering ricotta, fresh mozzarella, and snow milk" - wrote in his book the cook of the papal court.
